This is the Clint Eastwood—explosive and in your face, yet, sophisticated with major staying power.

    About the estate: Gold Winner 2007 Summer Fancy Food Show & Winner of the Medaille d’Or (Paris 2003). Innovation comes infrequently in Provencal EVOO, but Castelas, produced by Jean-Benoit and Catherine Hugues in La Vallee des Baux, moved back to their native Provence from Arizona to follow their dream of making olive oil. Produced  in the sun-drenched foothills of Les Alpilles, four different olive varieties are hand-picked and hand-pressed separately at the peak of flavor: Salonenque, Aglandau, Grossane and Verdale. Afterwards, Jean-Benoît blends the individual oils in exact proportions to create his signature style and flavor. Jean-Benoît is unique by not adding water (dilutes flavor) during the milling process to separate the oil from the paste. The only water comes naturally from the olives themselves. The result is a robust, flavorful EVOO with an extraordinary shelf life.

    Flavor style - Robust:
    To ensure optimum flavor, Castelas EVOO is pressed within hours of picking and only lightly filtered. It has a nose of freshly cut grass and green olive fruitiness. On the palate it offers long lasting flavors of raw artichoke and sweet almonds. It has a subtly elegant and extremely fresh character. On the finish, the oil has a slightly peppery, bitter edge (a sign that the olives were perfectly ripe when picked). This is truly a gastronomic wonder that will brighten up your cooking! I just tried your Castelas EVOO - was luscious with grilled halibut, shallots, tomatoes & fresh artichokes! Enjoyed seeing your Castelas video & the producer of this Provence in a bottle :) Noticed during Anthony Bourdain’s No Reservations Provence episode that Castelas was used for their Aioli. Your olive oils really are the BEST I've ever found for flavor…

Hey Bill! Just have to comment on the Castelas Olive Oil. You and I and Cheryllynn spent a great day in the south of France watching first-hand as this marvelous oil was gently separated from the olives. Our home always has a bottle ready for dipping and it is as incredible each time as the very first taste we had that day. Fresh, fresh, fresh with a wonderful finish. Thanks for that great day and for making this oil available!
