Description
- Bill’s twist. This artisan EVOO is produced 100% from the Italian classic oil variety, Frantoio olive. Thus, this is Luciano Pavarotti—commanding, moving, joyful, and deep in the heart. With one taste, you’ll be humming “Buongiorno Te.”
About the estate. This particular new selection is the outcome of many years of research into the varieties of olive, which have been traditionally grown in the Chianti region for the production of extra virgin oil. Campo Corto oil is made exclusively from the Frantoio olive, the most traditional variety grown in the area. The olive trees are encircled and protected by the ancient Coltibuono woodlands in a completely uncontaminated environment. Excellent accommodations, tours, restaurant, and cooking glasses makes this a prime destination on any trip to Tuscany.
Suggested uses. Flavor style: Robust In order to maximize the taste and bouquet, the robust Campo Corto Organic is not filtered; for this reason it may sometimes appear slightly cloudy. This cloudiness will, however, decrease over time and with decanting, until it completely disappears. The oil has an intense grassy bouquet with hints of artichoke and aromatic herbs. It has a highly distinctive, intense and vibrant taste that does not, however, obscure other flavors. There is also a characteristic spicy hint in the aftertaste. Campo Corto pairs well with vegetables, flavorful bread, roasts, game and mushrooms. Of course, their Chianti Classico Reserva will work nicely, too.
